As much as I like cooking a fabulous meal to share with friends and family, there are many nights when I just don’t feel like messing around in the kitchen. I want to get dinner on the table fast … but it’s still has to be good. I found a great way to a quick meal and I’m thrilled to share this simple formula with you.

Fabulous fresh greens + great leftovers = A quick, delicious, healthy meal in minutes.

I’ll give you an example. The other night I made a filet of roasted wild salmon and brown rice. I made too much, so there were plenty of leftovers. The next night I put together some Romaine and arugula in a big bowl, topped them with bits of the salmon and some of the rice, added some tomatoes and fresh mozzarella, sprinkled in some chia seeds and tossed it all with an apple cider and poppy seed vinaigrette, the recipe for which is below.

It was so good, I just couldn’t keep this helpful tip a secret. So the next time you feel like cooking…make lots of extras and then the next night you can have another fabulous meal with very little effort.

Apple Cider & Poppy Vinaigrette

(makes about 1 cup)

  • 1/2 cup extra-virgin olive oil
  • 1/2 cup organic apple cider vinegar
  • 1 Tbsp. honey
  • Juice from 1/4 orange
  • 1 tsp. poppy seeds
  • Salt and pepper to taste

Directions

Mix all ingredients together in a jar.

Shake and adjust the seasonings.

Add more oil if too vinegary.

Cut a slice of orange and leave it in the jar.
