Tomato, Cucumber Salad with Yogurt Dill Dressing is another great salad celebrating fresh farm grown tomatoes and cucumbers along with radishes and red onions. Each is sliced thin and then tossed in a homemade yogurt dill dressing that compliments their flavors beautifully. It’s the combination of ingredients in this salad that makes it so flavorful and refreshing you’ll want to make this again and again.

Like any simple dish, the key here is the freshness of the ingredients. Each must be fresh in order to honor it’s full flavor combining with each other to make something sensational. But what I love even more…is the dressing. It’s terrific not only over this salad but also on burgers and salmon. Make a big batch of this to keep in your fridge and no doubt you’ll discover lots of other uses for it no doubt.

 

Salad Ingredients (serves 4)

2 vine ripened tomatoes – cut in wedges

2 small cucumbers – quartered lengthwise and cut thin

1/2 small red onion – sliced thin

4 – 6 radishes – cut in half and sliced

 

Dressing

1 cup plain yogurt

1/8 cup extra virgin olive oil (or to taste)

1 tablespoon fresh lemon juice (or to taste)

1 tablespoon fresh dill – chopped

Salt and pepper to taste

 

Instruction

Add all ingredients to a large salad bowl. In a separate bowl, whisk together the dressing ingredients and drizzle over salad until all ingredients are moistened. Reserve the remaining dressing in a jar in the fridge. Should be good for about a week.
