I made this Watermelon, Red Onion, Avocado Salad today for lunch and literally inhaled it! I have photo proof below. The recipe is clearly simple. And you of course can add your favorite cheese. I happened to use caciocavallo, brought back from Greece by a friend. It’s made from sheep or cow’s milk and also popular in southern Italy. I also added thinly sliced jalapeño and added a lime vinaigrette. Inspired by a recipe I saw on Love and Lemons

The dressing a simple lime vinaigrette perfectly enlivens the salad even further. Don’t miss this one friends. Perfect for a weekend celebration with friends (you can easily double of triple the recipe) or…a single one for yourself!!

Ingredients

(for two)

1/4 watermelon – diced

1 avocado – diced

1/2 small red onion- thinly sliced

1 small jalapeño – thinly sliced

Shavings or dots of your favorite cheese

 

Dressing

1 teaspoon mustard

3 teaspoons fresh lime juice

1/2 cup extra virgin olive oil

1 teaspoon finely chopped lemon verbena – or mint, parsley, basil

 

Instruction

Add all salad ingredients in a big bowl. Drizzle with the dressing.

For the dressing, add the mustard and lime juice to the bottom of a small bowl. Slowly add the oil while whisking with a wire whisk until the oil is finished. Season with salt. Adjust and add more lime juice if desired. It should be a creamy consistency. Like this…
