What exactly is an AG Cookie? So glad you asked! LOL. It’s basically a breakfast cookie, made with two ingredients, oatmeal and banana, plus whatever else you want to add. This cookie came about quite naturally out of my excitement for being interviewed by the insightful lifestyle speaker, and fellow foodie, Anthony Gucciardi  as part of my participation in a love life summit which I surely will tell you more about at a later date. Let’s just say it’s such a good thing…it inspired it’s own cookie!

I, in turn, was inspired by a Tasty recipe I saw on Facebook and posted to my page,  Food and Ideas Worth Chewing on. And since Anthony’s favorite food are peanut butter and chocolate, I couldn’t very well create an AG salad with those ingredients! I thought about it, but seriously, I wanted something good, not silly.

These cookies however are not only my tribute to Anthony, but I must admit, me and every one of you who like a breakfast cookie that’s not too sweet cookie with your morning coffee, will LOVE these. For years, my breakfast cookie was a Stella d’oro, a habit I learned from my father but in recent years have found them (as in most store bought cookies) way too sweet!

This cookie has a base of oatmeal and banana. What you add from there is variable. There’s lots of sweet possibilities and all are so simple to make…a five year old can make these!!

So two essential ingredients…

1 cup (128 g) oatmeal

2 smashed bananas (medium)

To that I added…

1/2 (64 g) cup chunky peanut butter

1/2 cup chocolate chips

1 tablespoons (14.8 ml) raw honey

…but you could add: raisins, cranberries, nuts, coconut, and I would think lots of other dried fruits or seeds even. Play around with the additions. It could get interesting.

Instructions

Mix everything up and you’ll get a thick mixture like this.

Drop by  heaping tablespoons on a parchment paper lined baking sheet. Bake in a pre-heated 350 degree F oven (176.6 C) for about 12 – 15 minutes. This batch makes about a dozen. They’re thick so press down slightly before baking.

 

Enjoy with your coffee or tea. And have fun with different variations!
