Flatbread Pizza
I’ve made a lot of pizza in my day and one of my favorite short cuts to this hugely popular food, is flatbread. Grill it. Top it. Wait for the cheese to melt and it’s good to go.
For a fun pizza party, I like to sauté a variety of vegetables in a bit of olive oil and garlic; mushrooms, spinach, grape or cherry tomatoes, zucchini, whatever I have on hand, along with some fresh mozzarella and tomato sauce, and maybe some goat or shredded cheddar cheese.
This way everyone can top their pizza however they like.
Sautéing your vegetables first before topping your pizza is infinitely tastier than topping your pizza with raw ingredients. Sauté is easy. Place a skillet over medium/high heat. Add enough olive oil to lightly cover the bottom of the pan and heat until hot but not smoking. Add your vegetables and cook until they are tender.
