When I want something quick, flavorful, and substantive without having to make a full meal…I simply put an egg on it. This time it’s Sautéed Cabbage and Bacon! Easy Peezy and sooooo good.
This time I dressed this simple  dish with sweet peppers. Makes great leftovers too.
 

Ingredients – 4 servings

1/2 small cabbage – cut in bite sized pieces (core removed)
4 strips of bacon
1/2 small onion – medium dice
1 red bell pepper – ribs removed and sliced in bite sized strips

Instruction

Cook a few strips of bacon in a large skillet until crispy. Remove the bacon and set aside. Add the onions and cook it in the bacon fat until it softens (about 2 minutes). Add the peppers and the cabbage and cook until they begin to wilt. About 3 minutes. Crumble the bacon and mix with the cabbage. Serve with an egg and make a big bowl and serve as a side dish.
