Risotto is a dish that most Italians know how to make. It’s known for it’s creamy texture and adaptability to an abundance and variety of flavors depending on what you add to it. This recipe is one of my personal favorites: Risotto with Wild Mushrooms and Spinach…so much so that I made a video and slides of it, as well as a PDF of the recipe and a shopping list.
It may be a perfect side dish for this thanksgiving…especially if you have vegetarian or gluten free quests gracing your holiday table.
